Guilt Free Avocado Chocolate Mousse

Operation half marathon training is in full swing and I have managed to complete the two runs I'd planned for this week. The weather outside is quite literally gale force winds, which is a bit of a bummer because I was hoping to run outdoors. So I'd resorted to a treadmill run at the gym- not ideal but I'm trying to get back into the swing of running after a long absence over Christmas and New Year.

And as predicted I did feel like I was about to die.


But let's keep it short and sweet; a super quick post for a super quick recipe. Healthy recipe number two is this Guilt Free Avocado Mousse. No cream, no refined sugar, no use of egg whites and yet this mousse is smoooooth, creamy and light- thanks to the avocado. Avocado is a fruit that is rich in healthy, low saturated fats and contain 20 different vitamins and minerals including vitamin K and C aswell as vitamin B and E. Leave the mousse in the fridge overnight it becomes more like a chocolate pudding, which is also fine by me! Top with a little chopped dark chocolate, or toasted coconut flakes and raspberries and you have the perfect guilt free treat. Scroll down for the recipe!




GUILT FREE AVOCADO CHOCOLATE MOUSSE
Recipe adapted from Secret Squirrel
Yields 2 servings

1 small very ripe avocado, skin and seed removed
5-6 medjool dates, pitted and chopped into small pieces
115ml almond milk (or any other milk of your choice)
1 tsp vanilla paste
30g cocoa powder (I used dark cocoa powder)
Square of dark chocolate, chopped to decorate

  1. Put the medjool dates into a food processor and process until it becomes a smooth paste.
  2. Add the rest of the ingredients and blitz until smooth and incorporated.
  3. Spoon into small jars and chill for an hour.
  4. Decorate by sprinkling the chopped dark chocolate on top.

Note:

-If you find that the dates are too hard, soften in hot water before using in the recipe.
-I suspect this would be quite awesome spread onto a wholewheat cracker or Ryvita for a yummy afternoon snack!
