Valentine's Day Double Chocolate Cupcakes For Two



So it's Valentine's Day this week. To me it's just an excuse to go out for a meal with your other half and stuff my face full of chocolate spend quality time together.

These cupcakes for two (or one, if you're that way inclined...) are perfect for well, two people: delicious bites of chocolatey-ness. Dark chocolate sponge with creamy smooth chocolate buttercream, topped with sprinkles. Because who doesn't like sprinkles?



For those who don't have an other half, before you eerrrrghhh at the whole Valentine's thing, hear me out- these cupcakes are so easy and quick to make- omit the heart shaped chocs and treat yourself to a cupcake. Or two. If anything I'm saving you from having to demolish a  whole tray of cupcakes. Bonus.



DOUBLE CHOCOLATE CUPCAKES FOR TWO

Ingredients:

Chocolate Cupcake Sponge

1 1/4 tbsp plain flour
2 tbsp caster sugar
1 1/4 tbsp cocoa powder
Pinch baking powder
Pinch of bicarb soda
2 tsp oil
1 tbsp plain yoghurt
2 tsp hot water
Pinch of salt
1/4 tsp vanilla extract

  1. Preheat oven to 180°C and place two cupcake liners into a muffin/cupcake tray and set aside.
  2. Sift dry ingredients into a bowl.
  3. Create a small well in the centre and add the wet ingredients.
  4. Whisk for approximately a minute, or until the mixture is very smooth.
  5. Divide into the cupcake liners and bake for around 12-15mins, or until a skewer inserted into the centre comes out clean. A few crumbs is ok.
  6. Cool completely before frosting.

Chocolate Buttercream

25g/ approx 1 1/2 tbsp butter, very soft
4 tbsp icing sugar
25g dark chocolate, melted in the microwave in 10sec intervals
Drop of vanilla extract
11/2 tsp milk

  1. Mix the icing sugar (I just used a spoon!) Into the butter until very light and fluffy.
  2. Add the milk and beat to incorporate.
  3. Add the melted chocolate and mix until incorporated. Lastly stir in the vanilla extract.
  4. Pipe using a piping bag or spoon onto the cooled cupcakes and top with whatever sprinkles or chocolates you fancy.
  5. Cupcakes are best eaten on the day.
